I press the button until the sleep mode appears. I hold it for 5 seconds until it stops flashing, but sleep data doesn't download. It works for steps, calories and all the others.

There are no special instructions for the device. The sleep data should transfer after following the procedure. However, try looking through menus, because it's possible for the setting to be configured differently which prevents sleep data from being transferred.
Secondly, download the user guide available for this device. You should see all the basic operations available for this device.
I am very happy with my Fortis Trackfit, however, I am uncertain how to use the data from the sleep section (eg how to read it and what is normal?)?

The sleep data is the one you will need to acquire with the help of a wristband. The wrist band will collect the following data:
• Current time • Sleep length • Sleep quality • Steps taken • Calories burned • Distance travelled (km) • Activity time • Daily target progress percentage
The software will not offer standard numbers. You will need to analyze the data and see exactly where it exceeds and where it's normal. I believe the software has some parameters set up for a given range. You can buy KOGAN wristbands as they're compatibility with this software.
